Cashew Cheese

I made Cashew Cheese after much anticipation! After making the basic cheese, I combined it with onion powder, nutritional yeast and some salt and then sprinkled some crushed rainbow peppercorns on top. The peppercorns make it really spicy. I'll probably have this on some almond flax crackers I made last week. I'm looking for other recipes that involve cashew cheese - I'll keep you posted on what I find!

The other day I found an amazing recipe for Almond Milk here
It's the second post by "Rawaholic." The recipe calls for:
1 cup almonds, soaked overnight
1 tsp lecithin (an emulsifier found at natural food stores. i've used it for coconut whipped cream in my banana chocolate cream cake 
1 tsp vanilla extract
1/4 cup agave nectar
2 tbsp coconut oil
a pinch of salt
I'm going to try this tomorrow!
