Fruit and Nut Chocolate

A couple of months back I was inspired by Carmella's "For the Love of Chocolate" posting to buy some cacao butter. The butter's been sitting in my pantry for awhile now...until today. I had the biggest chocolate craving ever on my way home from school so I stopped by Henry's to buy some treats. I left with my usual stash: chocolate covered banana chips and some chocolate covered peanut butter malt balls for Jonathon. In the car, I nibbled on a malt ball and some banana chips only to realize that my palate had completely changed. I used to savor the banana chips enveloped in their velvety milk chocolate, but today it tasted bland and rubbery in my mouth. I decided to take action.
Making chocolate is ridiculously easy. All I did was mix a half a cup of melted cacao butter (warmed inside a bowl within a larger bowl of hot water) with a half a cup of coconut oil, then mix that with half a cup of cacao powder, two tablespoons of maca powder (inspired by Ani Phyo's recipe found here), two tablespoons of agave nectar and a teaspoon each of almond extract and vanilla extract. Then I added a half a cup of chopped almonds and a half a cup of raisins and goji berries. Then I poured it into a plastic container lined with parchment paper and froze it for an hour. The result? Badabing.
