Long time coming!



It's been quite some time since I last blogged. I just got back from Christmas vacay with Jonathon's family in Arkansas. It was fun, but I missed having Henry's farmer's market within walking distance of our house.  I had to take a hiatus from raw vegan creative cooking, but I got to enjoy some classic Southern delicacies like biscuits and gravy, brisket, chicken fried steak and much more.
These pics are of some delish concoctions I made since I've been back.
Pic one: Brownie cookies, recipe from Ani Phyo here. Nutty, rich and chocolaty. YUM.
Pic two: Mango nut bread, recipe from Ocean here. Sweet goodness. And to think, the only ingredients are pecans, mangoes and raisins!
Pic three: Falafel wrapped in collard greens. I was really excited about making a collard greens wrap because collard greens around San Diego are huge and great for wrapping around delicious fillings. I chopped of the thick stems and used a thin knife to shave of the thick spines so as to make the leaves more pliable. Then, I marinated them in warm water with salt. You can marinate the leaves for up to five days. I got the falafel recipe here. Best part about the recipe is that you don't have to soak the sunflower seeds, although I hear it's good to soak to increase the digestibility and therefore nutritional value. I topped the falafel off with some almonaisse, carrots and cucumbers. The almonaisse is full of healthy avocado oil and delish spices. I just enjoyed this for lunch and am excited to have it for dinner. 
What's next? Well, right now I've got some sundried tomato bread "baking" in the D. I can't WAIT to try it out, as Carmella and others have raved that it's to live for! : )
