Peanut Butter Cookie disaster


Yesterday I attempted to make a batch of vegan 
peanut butter sandwich cookies. I didn't have any peanuts, so I subbed almonds.

The only good thing to come out of my attempt was I figured out how to make my own almond butter. The problem with the cookies was, I couldn't shape the sticky dough into cookies! It was impossible to do, even after freezing for a couple of hours. No dice.

So, I decided to try to make some chocolate out of the batter. I rolled the batter into balls and rolled the balls into powdered cocoa, shredded dried coconut or some melted chocolate I made a couple of weeks back. The result? Really really decadent, chewy vegan chocolate. I guess something good did come out of it, after all : )

I've looked into a couple of chocolate recipes and it's apparent that dates create a more solid texture. The batter I used was really sticky and the chocolates came out chewy. I want something with more chocolate and more texture. I guess this is the beginning of my raw chocolate journey : )

On another lighter note, I got some spring form pans which I am so excited to put to use making vegan cakes. I might invest in Heathy's "Just Desserts" ebook.

Oh yeah, I almost forgot - the sundried tomato bread came out delicious. I'm making some sun patties to enjoy with the bread. I'll post pics later.
